Amaryllis and Fruit Cake


I'm thrilled that my first Amaryllis is blooming!   Two flowers and another bud is forming. My sister sent me info on what to do after it finishes blooming and I'm going to see if I can get it to stay healthy and maybe even bloom next year again.



My DIL passed on a bag of dried apricots and half a bag of light raisins, both were a year past their best-before date. I have no qualms about using something like dried fruit that is old. None of it was even a bit shrivelled.  I soaked them briefly in some Rum left over from eggnog season, added some glaced fruit that I had stocked up on before Christmas and this fruit cake is the result. Both my DH and I are very fond of fruit cake.  Never have understood all the jokes that people make about it.



Besides baking I cleaned the pantry where I keep casseroles and pots and pans. Decided which I would put in the thrift store box and now my cupboard is very neat.

  1. How exciting to see your amaryllis blooming and what a beauty it is. It will be interesting to see if you are able to get it to bloom again next year.
    Your homemade fruitcake looks delicious. I'm with you on using up dried fruit past it's date. Not an issue for me. My kids, on the other hand, think it has to be tossed the minute the date hits.

  4. I like fruit cake too. Yours sounds good. I didn't make any this year and I missed it.
    Our amaryllis is out in the greenhouse where Tom says it is coming on slowly. May be time to bring it in the house.

  5. Your fruit cake looks very yummy. I couldn't help but notice how clean your oven stays with all your baking...I wouldn't dare show anyone a photo of the inside of mine, lol! Your amaryllis looks so cheery. I hope mine will look as lovely.

  7. I am a great lover of a fruit cake too. Sorting out cupboards is an everyday occurrence for me at the moment, but it will be worth all the effort in the long run.

  13. I guess there are many different ways to make fruitcake. I always loved my mom's recipe. It was mostly pecans, dates and maraschino cherries with just enough cake to hold them together. The last two years I've thought of making one, but the cost has stopped me in my tracks! I may have to get brave and do it anyway! Beautiful amaryllis!

  15. Hi! Sounds like you are in the spring mood. I had an amaryllis once but it did not do well for me. Perhaps I didn't take care of it right. Yours is beautiful! I like fruit cake! Nancy

  16. Oh mercy, that fruitcake sounds delicious.

    My husband likes the fruitcake I used to make for him too. Guess it depends on "The Fruitcake" which one eats. A sad,dry one, could turn people off, I guess.

    Hooray for Neating-Up the pantry of casserole dishes too!

    and you certainly have a green thumb! As for myself, I do not. -grin-
