In My Kitchen

We went strawberry picking first thing this morning. Came back with 2 pails full of not so great berries. We were disappointed because it seems the farmers are planting the kind of berries you buy in stores at this time of the year. The ones with very firm white middles. Oh well, they still look and taste fairly good.



DH helped me prepare the berries for freezing and also for a batch of jam. Normally I don't use pectin but I did for these jars. I used the kind where you choose whether or not to use sugar and if so, how much. The regular pectin asked for 7 cups of sugar to 4 cups of mashed berries. I used a cup and a half of sugar to 4 cups of berries and its plenty sweet enough. It also called for a cup of  juice, I used apple.


We're having some cool days so yesterday I baked raisin scones, cheese biscuits, and I tried a new recipe for a banana pie. It's one of the "impossible pie" recipes using Bisquick. I won't be making it again. I guess banana pie isn't our thing. Banana CREAM pie, now that's another matter!!

As usual no two scones or biscuits were the same size since I must confess I am more interested in speed than accuracy. The taste, however, is great so no one complains.
Oh yes, I also made some little French breads, just the right size for 2 people and a little guy that comes up almost every morning to ask if Granny has any homemade bread he can have for his school lunch. He doesn't even want butter on it. He might have peanut butter but kids aren't allowed to bring anything with peanuts to school any more.

So that's what's been happening in my kitchen yesterday and today. Now I think I deserve to sit and put my feet up and read.

    I can't imagine using 7 cups of sugar to 4 cups of fruit. That would be terribly sweet! Yours sounds just right.
    I would come knocking on your door for fresh bread too! Smart little guy!

    We are in a hot spell, so I will use that, as my excuse for not doing anything like you did!! -grin- No, actually, even with cool weather, I'd not have come close to you.

    It does amaze me, how you can have all these delicious baked goods around your kitchen, and you not put on weight, like I do. If I did that.

    Ohhhhhh, "maybe" it's because, of all the things you do!!! -grin- That's it!!!!!

    I am shocked that kids can't bring peanut butter sandwiches to school any more. What do you feed little kids if not peanut butter? Oh, I do understand the issue of peanut allergies, but that seems to be going too far.

  10. Wow you have been busy such a lovely array of goodies. I made some jam recently but I don't use pectin I just let it boil until it thickens. The scones look wonderful. I don't have butter on my bread either.

  11. Yes, you have certainly earned some "prop your feet up and read" time. My goodness that is a lot of delicious looking food you have prepared. A bit disappointing that the farmer's strawberries were white in the center, but you have made them into luscious looking jars of jam.

  13. I wonder if the weather has anything to do with the white centres of the strawberries, as I can't imagine them planting those 'California' strawberries. Your baking looks so good. Do you share most of it with your son's family? I have no will power and would be helpless around all that. And you are so slim! We stopped eating a lot of foods that many could not do without, and I found for me, it was not the quantity I ate, or the exercise I got, but more about what I did or did not eat. I didn't lose an ounce while doing all that running. Anyway, that is a whole other long story. My jam is lower sugar, but not as low as yours. We don't eat it, other than me sampling a bit when I make it, and if there is a tiny bit left over, Larry will eat that. Hope you enjoyed your 'feet up and reading' time!

  14. Yes! With all the baking you did you do deserve a break! I have some frozen raspberry jam left over and probably won't make jam this year as we don't use that much of it. Yours looks yummy!! Nancy

  15. It's nice in the warmer weather when you get a day or two that is cool enough to bake. I love the Bisquick Impossible Coconut pie and I agree with you about the banana pie!
