This past week in my kitchen

We picked up some very ripe apricots and peaches and made jam. The apricots add such a nice colour to the otherwise pale peaches.


The cookie pail in the freezer was empty so I made Chocolate chip oatmeal cookies and while the oven was on I quickly made an Impossible Coconut pie. With this hot weather I've tried not to bake and heat up the kitchen too much


Dianna, on her blog ( Forgiven), made pickled beans this week and since I had quite a few beans that DH had picked I thought I'd make some too. I ran short of beans so I added some carrots to fill the jars. I hope they turn out nice and crisp and a bit on the spicy side. ( I added a clove of garlic and some hot pepper flakes as well as some dill to each jar).


On Sunday son#3 came over and he and DH went Blackberry picking at a place that our son knew about. They came home with quite a haul. The berries are very big and juicy this year which is a surprise since it has been so very dry.


                    Lastly I show you my lunch today. It was very tasty!!

  1. Everything looks so delicious! It was cool here today so cookies, a peach pie and blueberry banana muffins were made. I saw on the news how hot you have been.

    I admire your willingness to do all that "putting up," as they used to say. Will be worth the work, come winter time.

    I can't even try to bake much, in the summer. Autumn usually fees like baking time. But!!!! I shouldn't eat all that stuff. -another sigh-

    Of course, if I did more things, like you do, I could eat more. ,-)))

  4. Oh yum, looks fantastic. What do you do with all the blackberries? Do you freeze them or just eat them fresh?

    1. I freeze them in smallish containers to add to winter strawberry jam. Also made 2 jars of jam right away and sugared some that we already ate.

  5. You have been a busy lady in the kitchen this week! Everything looks so good! Don't you love how that impossible coconut pie works? That is one of our son-in-law's favorite pies!

    Thank you for mentioning me in your post. I was surprised to read here and find my name. It always amazes me when bloggers do that for me. :) What a clever idea to use carrots to fill up the jars that you didn't have enough beans for!

  7. It's all about the blackberries here! And yes, aren't they lovely this year? Some of them are monsters. The roots of those things must go down a long way because they sure seem to like this heat. Picked 13 ice cream /1 gallon/4 litre buckets yesterday. Have met the halfway point of our 50 bucket goal!

  10. Your kitchen has been busy! Those cookies look delicious... I never think to put cookies in the freezer but I should, then I would have a quick treat for unexpected guests!
