Cherry Pie

 

 

Good  Friday morning!!  The sun is shining but there's a bitterly cold wind. In my kitchen it's lovely and warm because I'm baking.  Today it's a Cherry Pie. Before you think I worked very hard to make it I must confess that I used a bought crust which I thawed, then added a can of Cherry Pie Filling to which I added some of our frozen cherries to make the pie a little fuller. I topped it with a crumb topping. 


 While the oven was on I thought of using some bread that was languishing in the freezer. I wanted to refill my container of  Veiled Farmer's Daughter. This is a recipe that I got from  Darren McGrady's site on You Tube.  (He was the Queen's cook for many years and now posts his recipes ( and a bit of gossip about the Queen).  This particular recipe became one of her favourites although initially she was suspicious of the title.  No doubt you can look it up but it's so simple I can tell you in 2 minutes.

You need fine bread crumbs ( prefer WW), Brown sugar ( prefer the dark kind but regular will do), and cinnamon.  Mix all together and spread on a cookie sheet. Bake about 8 minutes,I think he said,  but keep an eye on it.  I like this kind of recipe that isn't complicated and I can't remember if he specifies quantities but really, what can go wrong?  DH enjoys this on ice cream.

Have you heard of Crust Dust?   From King Arthur's Baking site....

 Crust dust is a 1:1 mix of flour and sugar. Flour creates a barrier, and sugar prevents clumping and holds liquid, preventing a soggy bottom.

Well, since I was making this pie I wanted to see how sprinkling this Crust Dust lightly on the bottom before adding the filling would work. I'll let you know.

  2. I learned so much from reading here today. I want to try both The Veiled Farmer's Daughter and Crust Dust. I'll be interested to hear how it worked with your cherry pie. The pie looks delicious, by the way.

    We did celebrate Thanksgiving here yesterday at my brother-in-law's house. My husband requested a Thanksgiving meal here at our house as well, so that's what I've been busy doing all day today. Then, God willing, tomorrow I will begin to gather up and put away all of our autumn decor and start bringing out the Christmas things little by little on Monday.

  3. Cherry pie is so delicious. I have never heard of Crust Dust or Veiled Farmer's Daughter. The youtube channel sounds interesting. It's cold, but sunny and that brightens my spirits.

  4. Your pie looks wonderful and the dust sounds delicious. I did put away my fall decor today and put out snowmen. I'm not decorating for actual Christmas since we will be gone most of December. Snowman can be out in January too!

  8. I often use bought pircrust these days. I can make good pastry, but it is so handy to have ready-made crusts when a pie is needed in a hurry---or I just don't feel like messing up the kitchen! Your pie looks delicious. Crumb crust, yum.
    What else would you use the Veiled Farmer's Daughter for, it sounds interesting! And I too am curious about the crust dust.

  9. Your pie looks yummy. I hope it was. We are getting snow so have to wait to put up Christmas decorations for a while. It's a walk on ice and snow to get to the garage that houses all those decorations. Oh well, at least I have my Christmas cards all done. diane in northern wis

  11. Thanks for these tips! There's an easy piecrust recipe I found somewhere that all you do is stir it up andmash into the pie plate. I'll look for it. Love cherry pies!

  15. Thanks for tip about Crust Dust - I will definitely have to try that, especially when I make cherry pie using our own cherries from the garden as there is always so much juice after the sugar has been stirred in with the fruit - makes a delicious pie but sometimes it can be abit soggy!

I think I've figured out where you live, roughly, I'm not a stalker! I'm two ferry rides up the Sunshine Coast. If I'm correct my husband's dear grandmother lived in your town.
