Happy New Year

 

 


 What an unusual year 2021 was for us. First we had the heat and drought of Summer followed by torrential rain and floods of Fall. Now we're experiencing record breaking low temperatures and snowfall.
We hope for better things to come in 2022.

Today the sun shone even if it didn't rise above freezing.  Some paths were  shoveled both in the front and back yard. Bird feeders needed filling and my bunny needed attention. (She is quite comfortable in her cozy house with a warming bulb overhead.)
I baked a Date Square and added the last of the cranberry sauce to the date filling. I think it adds a lovely tang to what can be an overly sweet filling. Then I made a Cheesecake, the kind that is whipped up in a few minutes and has exactly 3 ingredients ( besides the graham crust).  If you're interested the filling asks for a pkg. of cream cheese, 1/2 cup sugar and most of a container of Cool Whip. Once you've got the cream cheese and sugar well mixed you fold in the Cool Whip and that's it.  There's an on-going debate around here which is better....baked cheesecake or unbaked. The former is more work and calls for more ingredients so you know which one I';m more apt to make.

We'll be spending our New Years Eve quietly at home the way we've done for many years. Do you have any special way to celebrate?

  3. THose are beautiful photos that your DIL took. She's very talented. Our family much prefers the unbaked cheesecake and it certainly does make life easier. Dennis and Mandy ALWAYS choose it for their birthdays.
    The ice continued to settle from a freezing mist all day so we were inside most of the time. Dennis did take Mom some dinner because it was too slick for us to carry the entire meal to her house and the same for her to try to walk here. He barely made it because he kept sliding backwards down the hill. I was scared to death he was going to fall and break something. Through the day tomorrow 8-10 inches of snow is supposed to fall on TOP of the ice. What a mess.
    I sure hope 2022 is a better year, full of God's blessings and good things.

  5. I thought I would sleep through the coming of the New Year, but forgot about the local fireworks display. What a noise! One cat hid beneath the bed and the other got all agitated, but it never lasted long and we were all soon back asleep.
    I hope 2022 will bring you blessings of good health, wealth, and plenty of happiness :) xx

  10. For the new year all the best, joy, happiness and health ... yes the most important thing :-)
    We are the whole family here with me from Christmas to New Years Eve ... it's wonderful. The best time of the year. Lots of time together.
    Everyone leaves on New Year's Eve to celebrate the New Year with their friends.
    And my husband and I are celebrating a quiet and cozy New Year's Eve.
    I'm looking forward to a new blog year and thank you for the old one.

  12. What a pretty pattern on your bird feeder. I have been tying those "stacking ring" seed cakes onto limbs and fences with a bit of twine since both of my feeders cracked. The birds seem pretty happy but I have to go knock some seeds down for the weaker little bitty birds who can't pull the seeds off from the "glue" or glaze they use to make them into cakes. Of course, that brings the doves over and what a mess in the yard, but oh well, free fertilizer! Happy New Year! I like the unbaked cheesecake best, as it seems lighter than the other baked kind.

  14. What a nice post. The pictures are beautiful. I didn't know there was an easy way to make a cheesecake. That sounds really good and I want to try it. We have had the most unusual Christmas weather. One day last week it reached 77 degrees. I turned on the air conditioner and did again today when the temperature reached 76 degrees. All that is supposed to change tomorrow when a cold front comes through. Happy New Year!

  15. Your New Year's Goals are the best I have seen. I am making a copy so I can read them often. I love cheese cake either way. I can't recall ever having eaten anything made with cream cheese that I didn't like. Best wishes to you and your family for a wonderful new year.
