It's still hot here and we've now set a new record for consecutive days with no rain ( for our area). 42 days. I am still doing some baking because the kitchen gets dreadfully hot whether the oven is on or not. I baked this pie last week. Today I have dough rising for cinnamon buns.
The question I have for those of you who make pies is this: There's always a bit of extra dough so what do you do with it? I don't like to throw it out but don't always know what to make with it. This time I had a bit of extra apricot filling ( home made) so I made a tiny rustic pie.
* The pie was delicious. Both of them.

ReplyDeleteI hate to admit but I usually buy the already made pie crusts. When I was a child my mom would give me the extra dough. I think I sprinkled cinnamon sugar and raisins on it then rolled it up like a crescent roll. That was a long time ago, but I remember it tasting good.

I used to always make pie crust cookies with my leftover dough. Roll it out on a cookie sheet, score in diamonds, and brush with butter, shake on cinnamon and sugar. Bake hot until brown, and serve to all the people who have to wait longer for the pie. Of course you probably have done that many times...
ReplyDeleteI have rarely made an apricot pie. But they are one of the best in my opinion!
There are not too many of us who make pie crust from scratch. That's the only way I make pies.
ReplyDeleteI take the leftover dough scraps & lay them on a cookie sheet, they are sprinkled with cinnamon & sugar...I bake them after the pie comes out of the oven (very short time, just enough to brown ever so lightly--depending on thickness of crust scraps of course). Bud tells me they are Great with hot tea or coffee for an afternoon snack. I eat 'em with icy cold milk.

I usually just make a pie cookie. Roll it out, sprinkle with sugar and cinnamon and bake. Eating it warm is best. And that way I get to test the quality of my crust before I serve the pie.
ReplyDeleteMy Mom used to flatten the extra pie dough put a mixture of cinnamon and sugar on it and cut it into strips and bake it yummy!
ReplyDeleteWe make little cinnamon rolls with the extra dough. Roll it out, spread with soft butter, sprinkle cinnamon sugar on top, roll and cut. They don't take as long as a pie to cook so you have to watch them. I would guess 15-20 minutes. My mom used to do this and we kids loved them.
ReplyDeleteYour pies and all things you bake, as a matter of fact, always look delicious! In our house we always made pie crust goodies from the pie crust. Just roll it out, cut it into squares or whatever, top with cinnamon and sugar and bake. Deeeelicious!
ReplyDeleteOH, I will take the rustic little apricot pie any day! 42 days is a long time to go without rain. 2012 was a terrible drought year for us. I have forgotten how long we went without rain, but it was a long, long time.

ReplyDeleteYum! Your pies looks delicious! I have small individual foil "pie plates" from Dollarama that I use when I have leftover pie dough but they are small (really small) pies in comparison to yours. I used to freeze the bits of leftover dough but when I defrosted the freezer, they always landed up getting thrown out anyway so now I just use it up right away for small pies using any fruit, fresh or frozen, that I have handy.

Those pies look sooooo good! Like you, I don't throw out that dough. I usually roll into small balls and roll into non-pariels, kind of like a non-sweet cookie ball. I like the cinnamon-sugar idea I read about in the comments!
ReplyDeleteIf I have just a little bit of dough left over, then I make a little decoration for the top of the first pie. Sometimes I'll make a second rustic pie, just as you did :) I've also just spread it on a pan, put butter and cinnamon/sugar on it, and baked it as a treat for the kids.
