My Christmas cactus is blooming ( or is it a Thanksgiving cactus? I'm never sure). The white one is a bit later and it's not as full of buds as the yellow/peach-coloured one.
I baked peach muffins yesterday and we all enjoyed them so much that I made another dozen today.
The fruit cake has been cut up, wrapped tightly in foil and frozen. I noticed that it seemed a little dry so I took a skewer and poked a lot of holes in it and brushed the top liberally with rum. Hopefully that will make it more moist. I must remember to change the time on my recipe card. 2 1/2 hours is too long obviously even at a low temperature.
Have a pleasant weekend.

I never have seen a yellow Christmas-cactus (Thanksgiving-cactus!!) ! It looks wonderful! The color fits to the peaches in your muffins :))
ReplyDeleteGood idea ti o bring some rum into the fruit cake to make it not only more moist, but also rich with a special winter-aroma!
Your making me hungry again G.M.....just love Muffins.
ReplyDeleteThose muffins look scrumptious!!
ReplyDeleteAnd your cactus...beautiful.
Your Christmas cactus is such a lovely color! My pink one is now in bud but only the side of the plant that faces the window - perhaps I should rotate the plant from time to time? The muffins look fantastic - do you use frozen or canned peaches for the recipe? Wish I could come pop by for a cup of coffee and muffin!

If I ever get to actually leave this house again I really want a Christmas cactus — I had one years ago and I killed it —I would like to try again.
ReplyDeleteyum... fruitcake. I like a little fruitcake at Christmas time but none of my family does. Boo Hoo. But, I sneak a little in here or there. A gal's gotta do what a gal's gotta do.
ReplyDeleteOh, how nice, baking is just wonderful :-)) I made waffles with the waffle iron today :-))
ReplyDeleteWonderful flowers are on your Christmas cactus, I only know them in red.
Many greetings from Viola
I'm jealous of your unusual color of Christmas cactus! It's hard to believe it's almost time for my bright pink one to bloom, that is, if it IS going to bloom this year. Maybe it's time to move it into the light, which I think is what will prompt it to flower...
ReplyDeleteI think your "Thanksgiving" cactus is very pretty. Yours is the only peach one I've ever seen. Poking the holes and pouring rum on the fruitcake was a great idea. Your baking always looks delicious too. If I lived with you I would weigh eve more than I do. Alex and his wonderful wife will be bringing mince pies to us from London next week. Oh my! They are the best thing. So much better than any I've ever had here. They bring them to us every Thanksgiving. Yum!
ReplyDeleteBlessings and hugs,
Betsy

ReplyDeleteThe muffins sure look good.
ReplyDeleteI've never seen a yellow Christmas Cactus!
ReplyDeleteWhat a beautiful colour your cactus is. Mine blooms at odd times throughout the year, but it's a regular red-pink one. Peace muffins sound delicious. Have a good weekend.
ReplyDeleteRum should fix that fruit cake right up!
ReplyDeleteI love your blog header!! So pretty!
ReplyDeleteThose muffins look delicious! I had a Christmas cactus once......things die on me! I have not one houseplant now!
How beautiful your Christmas cactuses are. Your green thumb seems to do its thing twelve months out of the year. Muffins do make the best snacks. Yours look delicious! Hilltop Post
